Hey Boot Campers
Just a quick post today to tantalise your taste buds!!! Don’t have much time for posting today as I spent most of the day with the Bay Stars Soccer Players doing fitness and other tests.
Enjoy this salad and serve it with cous cous for a truly delicious low calorie summer meal!!

Serves: 4
Ingredients
- 1/3 cup Slivered Almonds
- 1 clove Garlic
- 1 tsp Honey
- 1 tsp Dijon Mustard
- 1 1/4 tbsp Raspberry Wine Vinegar
- 2 tsp Basalmic Vinegar
- 2 tsp Brown Sugar
- 3 cups Lettuce
- 1 cup Fresh Strawberries
- 1/3 cup Feta Cheese Crumbles
- 1/3 cup Extra Virgin Olive Oil
Directions
1. In a frying pan over medium-high heat, cook the almonds, stirring frequently, until lightly toasted. Remove from heat, and set aside.
2. In a bowl, prepare the dressing by whisking together the garlic, honey, Dijon mustard, raspberry vinegar, balsamic vinegar, brown sugar, and vegetable oil.
3. In a large bowl, toss together the toasted almonds, romaine lettuce, strawberries, and feta cheese. Cover with the dressing mixture, and toss to serve.
4. ENJOY!!
